Green Eggs
 

 

Ingredients

3 to 4 eggs 1 tbsp olive oil
1/3 cup of water
½ cup onions, chopped
1 tbsp garlic, chopped
1 tsp chilli flakes
½ tsp cumin powder
 A pinch of nutmeg
1 medium green bell pepper, sliced
1 cup spinach leaves
½ cup methi leaves
3 to 4 broccoli florets, sliced
Salt and pepper to season
 

Method:

  • Heat the oil and add sliced bell peppers, onion, garlic. After adding these, sweat the mixture for a minute.
  • Add chilli flakes, cumin and nutmeg.
  • Add the green leaves and sauté the vegetables well for two minutes.
  • After sautéing, add two to three tablespoons of water and cook the vegetables.
  • Crack the eggs into the pan over the vegetables and cover the pan
  • The eggs will then poach slowly and will be ready in 4 minutes.

 

 

 

Oat & Banana Pancakes
 

 

Ingredients

1 cup quick cooking oats 1 cup flour
2 to 3 shelled walnuts 1 banana overripe
1½ cup of coconut milk or any other milk A pinch of salt
½ tsp baking powder 1 tbsp oil / butter

 

Method:

  • Blend the oats, flour, milk, walnuts, salt and powder into a smooth medium-to-thick batter.
  • Heat some oil or butter in a non-stick pan. Using a ladle, drop the batter into the pan.
  • Cook for about two minutes on either sides till the pancakes are cooked through and look golden brown.
  • Once the dish is ready, serve it with honey and melted butter.
